It's my 26th birthday in three days! I love getting older. I love how I'm settling into who I am. Each year it gets easier and easier to let go of things that don't matter and focus on what does. Hell, it gets easier to know what does and doesn't matter. I love that the older I get, the more I've traveled, experienced and learned. Most of all I'm thankful that I made it to 26, because growing old is a privilege and we shouldn't ever forget that.
To celebrate, we're making cheesecake. This recipe is a twist on a classic. You've got your cream cheese, sugar, eggs, etc. We're adding a dollop of peanut butter into the center for a subtle peanut buttery flavor. Not too much, because I still want it to taste like cheesecake. Pour that over your Oreo crust, pop it into the oven and watch that sucker, especially at the end of the bake time. You want it firm on the rim and almost-but-not-quite set in the center. It'll give you the best overall consistency that way.
Last, we're topping it with chocolate ganache, which is just cream and chocolate melted together in a saucepan. Sprinkle with Reece's or whatever candies you love best and let chill in the fridge before serving!
