I have made a lot of protein pancake recipes over the years. I've tried good ones and bad ones and everything in between. This is definitely one of the good. It's so simple, super tasty and yes, healthy! We use soy protein powder, which is plant-based and vegetarian-friendly. This recipe calls for homemade "oatmeal flour," which is really simple - you just grind dried oatmeal in a blender until it become powdery, like flour. After that, it's just a matter of mixing in the remaining ingredients and pan-frying them like you would regular pancakes. Top with syrup, butter, peanut butter, fresh fruit - the sky's the limit!
